Vegetable and Meat / Pork / Chicken Cannelloni


1 kg chard or spinach
250 g textured soy protein (any flavor)
3 onions
2 eggs
100 g of butter
100 g of flour
1 liter of milk
Grated cheese
16 pancakes


Boil the chard or spinach, drain it and let it cool.
Once cool, squeeze it with your hands to remove the excess of water.
Chop and set aside.
Sauté the onion and prepare a béchamel sauce.
Melt butter, add flour, stir and cook for about 4 minutes, add cold milk.
Stir until the mixture is thick, season with salt, pepper and nutmeg.
Set aside.
In a bowl, mix the chard or spinach with the onion, the textured soy protein already hydrated, the eggs and two tablespoons of béchamel sauce.
Add salt and pepper again.
Assemble the cannelloni and arrange them in a deep baking tray.
Cover them with the remaining béchamel sauce and cheese.
Bake in a hot oven for 25 minutes.
